A Note on Indian Food

Some say there are 5 main Indian spices, others stop at 7. For me, the list of Indian spices varies anywhere between 40-60 which are grown in the varied climatic regions of India. Pulses, gram, rice, vegetables, and meat are also extensively used in Indian cooking. While the regional cuisines use similar spices that act as common threads, all 29 states of India have unique cuisines to offer. So you see, there is no dearth of variety in Indian style of Cooking.

Our expert chefs under the guidance of our experienced head chef Mr. Kamal Hussain Chowdhury, work fervently to bring out all the authentic regional tastes under one roof at The Shad. Mr. Chowdhury a food aficionado, has expertise in preparing meat, fish, and vegetarian delicacies. His innovative gourmet Indian recipes are unique to our restaurant. Tandoori Prawn Masala Recipe: Creamy, tangy, sweet and spicy, this succulent dish will not last for long on your table. The King prawns are cooked in earthen clay ovens to bring out the authentic flavour that will not leave your taste buds for a while to come!

Lamb Sikandari: The chef lovingly immerses lambs in his secret marinating recipe for 48 hours and cooks the dish in chickpeas sauce. Every bite is gastronomic!

Chef’s recommendation:

Dhaka Murgh: An ode to his native place, this dish occupies a special place in the head chef’s heart. Fresh chicken breasts are stuffed with minced lamb, veggies, and potato, seasoned with coriander and glazed with honey. A simple yet delectable combination of ingredients.
